Oreo Cheesecake Bites

- 36 Oreo cookies
- 1/2 cup butter or margarine
- 32 oz. cream cheese, softened
- 1 cup sugar
- 1 cup sour cream
- 1 tsp. vanilla
- 4 eggs
- 4 oz. semi-sweet baking chocolate
- Preheat the oven and prepare the baking pan
- Make the cookie crumbs
- Combine ingredients
- Beat in an egg
- Add crumbs and transfer to the pan
- Bake and cool
- Melt the chocolate
- Stir, cool and spread the chocolate
- Chill and serve
Heat the oven to 325 degrees Fahrenheit and line a 9-inch by 13-inch baking pan with foil, overlapping the sides.
Crush 24 of the cookies into crumbs and mix thoroughly with half of the butter. Spread across the base of the baking pan, pressing it into place.
In a bowl, combine the cream cheese and sugar and mix in the sour cream and vanilla.
Beat in one egg at a time until the mixture has reached an even consistency.
Chop up the remaining 12 cookies and stir into the cheese and cream mixture. Transfer to the baking pan, pouring over the cookie crumb crust.
Bake in the oven for 45 minutes. Remove and cool.
While the cheesecake is cooling, take the remaining butter and microwave it in a bowl with the chocolate for between 45 seconds and 1 minute on high.
Stir to combine and allow to cool slightly before spreading over the cheesecake.
Refrigerate for 4 hours and then lift the cheesecake from the pan by holding the foil. Slice into bite-sized portions and serve.
